Instant Pot Coin Spinach Idly (Lunchbox Recipe)

This is one of the best ways to include the spinach in our diet. This can also be definitely a good choice for packing in our lunchbox. I have already posted few idly recipes - kaima idly, idly fry, protein rich idly fry, how to make idly batter, Flaxseed Podi Idly, curd idly.

Cooking time: 3 mins per batch

Serving: 2  (4 mini plate idlys)

Ingredients:

Idly batter - 2 cups
Spinach - 1 cup (finely chopped)
Oil to grease

To Grind:

Green chilli - 2
Cumin seeds - 1/2 tspn
Ginger - 1/2 inch

Method:

1. Grab all the ingredients.

2. Grind all the ingredients for it without adding water.

3. Add the grinded paste, spinach to the batter. Mix well.

4. Grease the idly plate with oil. Pour the batter in each mould.

5. Switch on the IP. Pour 1 cup of water in the inner pot. Press the saute mode. When the water starts boiling keep the idly plate over the trivet.

6. Close the lid. Press the steam mode for 3 mins in vent position in High Pressure HP.

7. When the steam starts coming out count 3 mins on your timer. Then switch off. Let the pressure releases naturally.

8. Open the lid. Take out the idly plate. Let it sit for a minute. Scoop out the idlys.


9. Repeat the same . Since I had a single plate I did 4 times. Keep all the idlys in a bowl. You can serve this with coconut chutney or sambar or any chutney of your choice.

10. I did tossing these idlys with idly milagai powder and sesame oil.

Notes:

You can do the same in normal idly plates. Preparing this way makes the kids lunchboxes more interesting.
