Instant Pot Cabbage Channa pulao (Lunchbox Recipe)

This is a very good healthy and a tasty choice for packing in your lunchbox. I have already posted few lunchbox recipes - Mushroom rice, horsegram peas rice, fenugreek rice, shallots garlic rice, coriander pulao, soya mint biriyani, protein rich idly fry, kaima idly, millet pulao, egg masala rice.

Cooking time: 10 mins

Serving: 2-3

Ingredients:

Basmati rice - 1 cup (1 cup - 200 ml)
Green channa - 1/2 cup
Cabbage - 2 cups (chopped)
Onion - 1 (small, finely sliced)
Tomato - 1 (medium, sliced)
Mint leaves - few (about 20 leaves, chopped)
Coriander leaves - a handful (chopped)
Turmeric - 1/4 tspn
Bayleaf - 2
Cinnamon - 1 inch
Cloves - 2
Cardamom - 1
Staranise - 1
Oil - 2 tspn
Ghee - 2 tspn
Salt to taste

To Grind:

Ginger garlic paste - 1/2 tbsn
Green chilli - 2
Fennel seeds - 1 tspn

Method:

1. Grab all the ingredients. Wash and soak the rice for 1/2 an hr.

2. Grind the ingredients for it into a coarse paste without adding water.

3. Switch on the IP. Add oil, ghee, bayleaf, cinnamon, cloves, cardamom, staranise.

4. Add onions and saute till it becomes pink.

5. Add grinded paste and saute till the raw smell goes.

6. Add tomato, half of mint leaves, coriander leaves and saute till it becomes mushy.

7. Add channa, cabbage, salt, turmeric and saute for 2 mins (there should not be any water content).

8. Add 1 1/2 cup of water.

9. Add the soaked rice. Add remaining mint leaves. Mix well.

10. Close the lid. Press the manual for 5 mins in High Pressure HP in sealed position. Then do Natural Pressure Release NPR.

11. Open the lid. Mix the rice gently.

12. Yummy n healthy cabbage channa pulao is ready to serve with onion raita.

Notes:

You can add white or black channa instead of green one. But add the cooked ones.
You can try the recipe in normal rice too.
