Egg Masala Rice (Muttai Masala Saadham - Lunch box recipe)

This is a good choice that can be prepared very easily when you don't have any veggies in your refrigerator. Please have a look at my other rice recipes - Mushroom rice, Flaxseed garlic rice, horsegram peas rice.

Ingredients:

Basmati rice - 3/4 cup ( 1 cup - 160 ml)
Eggs - 2
Onion - 1 (medium size, thinly sliced)
Ginger garlic paste - 2 tspn
Green chilli - 2 (finely chopped)
Tomato - 1 (big, sliced)
Turmeric - 1/4 tspn
Coriander powder - 2 tspn
Red chilli powder - 1 1/2 tspn
Curry leaves - few
Coriander leaves - few (chopped)
Cinnamon - 1 inch
Cloves - 2
Cardamom - 1
Bayleaf - 2
Fennel seeds - 1 tspn
Oil - 2tbsn
Salt to taste

Method:

1. Grab all the ingredients. Cook the rice. Fluff it with a fork.


2. Heat a kadaai. Add oil, bayleaf, cinnamon, cloves, fennel seeds, cardamom.

3. Add onions, green chillies, curry leaves and saute till the onion becomes golden brown.

4. Add ginger garlic paste and saute till the raw smell goes.

5. Add tomato and all the spice powders and saute till it becomes mushy.
6. Crack the eggs and add into the above mixture. Mix and saute till the eggs are cooked well.

7. Add cooked rice and mix well. Close it with a lid and keep in sim so that he rice gets heated evenly with the egg mixture. Garnish with coriander leaves.

8. Hot egg masala rice is ready to serve.
