Instant Pot Body Cooler Rice (Fenugreek Rice / vendhaya saadham in IP)

Fenugreek has lots of health benefits such as reducing the cholesterol levels, minimize the symptoms of menopause, reduces menstrual discomfort, relieves constipation, controls diabetes and good for kidney troubles. Eating a spoon of soaked fenugreek seeds every morning is very healthy for the whole body and keeps the body always cool. So including this natural medicine in our diet is very important to get rid of many problems. Please don't think that a medicinal value diet will not hit your taste buds because this rice really tastes yummy.

Serving: 2-3

Ingredients:

Sonamasoori rice - 1cup (1cup - 160 ml)
Shallots - 10 (thinly sliced)
Tomato - 1 1/2 (thinly sliced)
Green chilli - 2 (slitted)
Ginger - 1 inch (finely chopped)
Garlic - 4 (chopped)
Turmeric - 1/4 tspn
Coriander powder - 2tspn
Red chilli powder - 1 tspn
Mustard seeds - 1/2 tspn
Fenugreek seeds - 2 tspn
Fennel seeds - 1 tspn
Coconut milk - 2 1/4 cup (thin milk)
Curry leaves - few
Coriander leaves-few (chopped)
Sesame oil - 2tspn
Salt to taste

Method:

1. Grab all the ingredients. Wash and soak the rice for 1/2 hr.

2. Switch on the IP. Add oil, mustard seeds.

3. Once it splutters add fennel seeds and fenugreek. Both must become golden brown.

4. Add shallots, ginger, garlic, green chillies. Saute till the onion becomes light golden brown.

5. Add tomato and salt. Saute till it becomes mushy.

6. Add coriander powder, red chilli powder and turmeric. Saute till the raw smell of masala goes. It should come like a thick masala.

7. Add rice.

8. Add coconut milk, curry leaves and coriander leaves.

9. Close the lid. Press the manual for 6 mins in High Pressure HP in sealed position. Then do Natural Pressure Release NPR.

10. Open the lid. Mix well.

11. Enjoy the healthy natural body cooler rice. Serve it with raita or any stir fried vegetable.

Notes:

You can add water and coconut milk half n half proportion.
You can add big onions too.
Fenugreek seeds should become golden brown. Over sauteing turns the rice into bitter taste.
