Healthy Varagu Salad (Millet vegetable Salad)

Though most of the millets have many nutritional benefits, kodo millet is one that has a good protein content and very high in fibre too. They are also rich in vitamin B6, folic acid and contains minerals like calcium, iron, magnesium, potassium and zinc. It has many anti oxidation and anti obesity properties. Ingredients:

Kodo millet / varagu arisi - 1/4 cup
Black channa - 1/4 cup (boiled in IP)
Carrot - 1/4 cup (grated)
Cabbage - 1/2 cup (chopped)
Cucumber - 1 (finely chopped)
Spring onion - 1 stalk
Coriander leaves - few (chopped)
Lemon juice - 1 tspn
Pepper powder - 1/2 tspn
Olive oil - 1 tspn
Salt to taste

Method:

1. Grab all the ingredients.

2. Cook the millet in IP. Wash the millet and add 1/2 cup of water (minus 2 tbsn). Keep the vessel containing the millet over the trivet. Press the manual for 4 mins in High Pressure HP in sealed position. Then do Natural Pressure Release NPR.



3. Fluff it with a fork. Cool down the millet completely.

4. In a wide bowl add all the ingredients. Mix well.

5. Heart healthy millet salad is ready to serve.

Notes:

You can do the same receipe with other millets too.
Add sprouts if you like.
If your millet seems sticky spread it in a plate with a spoon of oil. It will become grainy once it cools down.
You can cook the millet in open pot too as it cooks quickly.
If you pressure cook then cook for 1 whistle.
