Triple C Salad (Avocado chickpea salad)

Many people prefer salad nowadays to go for a healthy diet. We all should try to have salad as a main course at least one day in a week. Nowadays more pesticides are used in growing vegetables and fruits. Since the salads contains more raw veggies, we can tackle from those pesticides problem by washing the vegetables and fruits in water diluted with vinegar or rock salt water with turmeric. The name given to the salad is because of adding coconut, cucumber and carrots 😉

Ingredients:

Chickpeas ( white channa) - 3/4 cup (boiled)
Avocado - 1/2 (chopped  into cubes)
Carrot - 1/4 (chopped into cubes)
Beetroot - 1/4 (chopped into cubes)
Coconut - 1/4 cup (chopped into cubes)
Cucumber - 1/2 (chopped into cubes)
Baby spinach - 15 leaves (finely chopped)
Tomato - 1 (chopped into cubes,remove the pulp part)
Olive oil - 1 tbsn
Lemon juice - 1 tbsn
Sugar - 1/2 tspn
Pepper powder - 1/2 tspn
Walnut -  few(chopped)
Salt to taste

Method:

1. Grab all the ingredients.

2. Lets prepare a dressing for the salad. In a wide bowl add lemon juice, olive oil, salt,sugar, pepper powder. Mix well with a spoon or a fork.

3. Add carrot, beetroot, baby spinach, cucumber, coconut, chickpeas and tomato. Mix well.

4. Now add avocado and mix gently.

5. Finally add walnut to maintain the crunchiness. Enjoy this crunchy😋 salad with some soup to have a wholesome meal.

Notes:

Avocados are very soft textured and that's the reason of adding those in the last.
