Simple sprouted moongdal salad


Sprouts contains fiber, manganese, riboflavin, iron, phosphorous & potassium.  It help in preventing aging & low in calories.  They can be used in almost all salads which gives a crunchiness to the food.  This salad can be done with many other combinations and here is the basic simple method that can be prepared very easily.

Serving: 2

Ingredients:

Sprouted moong - 1/2 cup
Cucumber - 1/2 cup (chopped)
Tomato - 1 (chopped)
Carrot - 1/2 cup grated
Roasted peanuts - 1/4 cup roasted
Lemon juice - 1 tbsn
Salt to taste
Pepper to taste
Coriander leaves - few

Method:

1. Grab all the ingredients.

2. First cook the sprouted moong with 3 tbsn of water until all the water is absorbed or you can also steam it.  This is done since many people don't prefer to eat the raw sprouts (me too).  This method of cooking gives half boiled sprouts and the crunchiness remains.

3. Add all the ingredients except peanuts.

4. Mix well and add the peanuts while serving to maintain the crunchiness.

Notes:

You can take raw sprouts, if you like.  No need to steam.
Peanuts gives a nice crunchiness to the salad so don't avoid it.
