This is a healthy evening snack made out of wheat flour and amaranth (rajgira) flour with mixed carrot, radish and few spices. Amaranth is very new to me while browsing that is mainly taken during fasting. Check out the FENUGREEK CHAPPATHI and PHULKA... Here is the recipe goes....
Amaranth flour - 1/2 cup
Onion - 1/2 (chopped)
Radish - 1/2 (grated)
Carrot - 1/2 (grated)
Ginger - 1 inch
Green chilli - 2
Cumin powder - 1/2 tspn
Coriander leaves - 1/2 cup (chopped)
Oil - 2 tspn plus to prepare roti
Salt to taste
2. Grind the ginger and green chillies into a paste. Keep it aside. Heat a pan. Add oil, mustard seed. Add onions. Saute till it becomes translucent. Add grinded paste and saute for few seconds. Add carrot and radish. Add salt, cumin powder. Saute for a minute. Add coriander leaves. Mix well and switch off. Allow it to cool down.
3. Add both the flours, sauted mixture in a bowl. Mix well and prepare a dough by adding little water.
4. Take a lemon sized ball out of the dough. Rub a few drops of oil on a plastic sheet. Place the ball and spread like a roti using your hands. You can use oil or water for spreading. Put a hole in the centre.
5. Heat a tawa. Add the roti. Drizzle oil around the edges. Close it with a lid and cook for a minute.
6. Flip it on the other side of the roti and cook for 1 more minute.
7. Enjoy the rotis with any chutney or pickle or even as it is. I served it with ginger thokku.
Cooking time: 2 mins per roti
Serving: 6 rotis approximately
