Vegetable Raita

This is a healthy and colorful raita that can be served for shallots garlic rice and any other pulao varieties. Check out my beetroot raita.

Ingredients:

Thick unsour curd - 1 cup
Carrot, beans, peas, potato - 1/4 cup (each)
Coconut - 2 tbsn (finely chopped)
Tomato - 1 (finely chopped, remove the seeds)
Ginger - 1 tspn (grated)
Cumin seeds - 1/2 tspn
Coriander leaves - few (chopped)
Salt to taste

Method:

1. Grab all the ingredients.

2. Place the trivet into the pot with a cup of water in it. Keep a vessel containing all the vegetables with a tbsn of water.

3. Press the manual for 3 mins in High Pressure HP in sealed position. Then do Natural Pressure Release NPR. Cool down completely.


4. In a bowl add curd, tomato, ginger, coconut. Add cumin seeds.


5. Add all the vegetables and coriander leaves. Add salt and mix well.

6. Rich creamy, healthy and colorful raita is ready to serve with shallots garlic rice.
