Beetroot raita ( Beetroot pachadi)


Beetroot is a good source of potassium and other minerals. It helps to prevent cancer, to maintain healthy weight, improves muscle power in people with heart failure. In my childhood days when my mom packs this for my lunch box my friends used to come and have a fun around me to look my pink ๐Ÿ‘… after eating this raita๐Ÿ˜‚.

Cooking time: 15 mins

Serving: 4

Ingredients:

Beetroot - 1 (small, grated)
Onion -1/2 (finely chopped)
Tomato - 1 (small, finely sliced)
Green chilli - 2 (slitted)
Curd - 1/2 cup
Turmeric - 1/4 tspn
Mustard seeds - 1/4 tspn
Uraddal - 1/2 tspn
Oil - 2 tspn
Coriander leaves - few (chopped)
Salt to taste

Method:

1. Grab all the ingredients.

2.Heat a pan. Add oil, mustard seeds, uraddal.

3. Once it splutters add onion and green chillies. Saute until it becomes transparent.

4. Add tomato and saute till it becomes mushy.

5. Add beetroot, salt, turmeric. Saute for a minute.

6. Add 1/4 cup of water cook until beetroot is cooked.

7. Switch off. Once it cools down add curd and garnish with coriander leaves.

Notes:

This raita goes well with any kind of Spicy kuzhambhu/ curry.
