Instant Pot Lemongrass barley soup (IP Diet Soup)

Lemongrass when infused in soup gives a lovely flavor to the soup. Barley when combined with this lemongrass is a super delicious and healthy soup in our diet. I have already posted few barley soup recipes - barley tomato soup, lemony barley soup, barley horsegram soup, barley celery soup.

Serving: 2

Ingredients:

Barley - 1/2 cup
Lemongrass - 1 stalk (chopped)
Chicken breasts - 50 gms (chopped)
Onion, white part of spring onions - 3/4 cup (chopped)
Ginger - 1 inch ( finely chopped)
Garlic powder - 1/2 tspn
Pepper powder - 1/2 tspn
Rosemary - 1/4 tspn
Italian seasoning - 1/2 tspn
Turmeric - 1/4 tspn
Coriander leaves - few (chopped)
Oil -1 tspn
Salt to taste

Method:

1. Grab all the ingredients.

2. Switch on the IP. Press the saute mode. Add oil, onions, ginger, lemongrass. Saute for a minute.

3. Add chicken, turmeric, salt and all the spice powders. Saute for few seconds.

4. Add barley and 2 cups of water.

5. Close the lid. Press the manual mode for 10 mins in High Pressure HP in sealed position. Then do Natural Pressure Release NPR.

6. Open the lid. Add coriander leaves.

7. Enjoy the super healthy diet soup.

Notes:

You can prepare the same soup without chicken. Add mushrooms instead of chicken.
You can add any italian seasonings. If you don't have you can add simply pepper powder and salt.
You can add chopped garlic instead of garlic powder.
