Instant Pot Broccoli Coriander Pesto Pasta

Usually pesto sauce includes basil, pine nuts as the main ingredients. When I browsed about the pesto many had tried with cilantro. What I thought to include and make it a very healthy pasta is that the broccoli and almonds in this pesto that also tastes great. I have already posted crunchy vegetable spaghetti, Indian masala spaghetti, Mac n Cheese, pasta celery soup.

Cooking time: 5 mins

Serving: 1

Ingredients:

Pasta - 1 cup
Broccoli - 1/2 cup (small florets)
Coriander leaves - 1 cup (chopped)
Almonds - 6 (blanched)
Garlic - 1 (small)
Pepper powder - 1/4 tspn
Parmesan cheese - 1 tbsn
Olive oil - 2 tspn + 1 tspn
Salt to taste

Method:

1. Grab all the ingredients.

2. Steam the broccoli over the trivet for manual 0 mins in sealed position in High Pressure HP. Quick Release QR after 5 mins. Keep it aside.



3.  In the meantime cook the pasta with a tspn of oil, salt, water (just to cover the pasta) for manual 5 mins in High Pressure HP in sealed position. Then do Natural Pressure Release NPR. Keep it aside so that it comes to room temperature.



4. Grind the broccoli, coriander leaves, garlic, almonds, cheese, olive oil, pepper powder into a fine paste.

5. Add the above paste to the pasta and mix well.

6. Yummilicious healthy broccoli coriander pesto pasta is ready to serve.

Notes:

You can also try the recipe without broccoli.
A small garlic is enough for this recipe otherwise you will feel more pungent smell of that in the pasta.
