Instant Pot Black rice Soup (IP Kavuni Arisi Soup)

Cooking time: 20 mins

Serving: 2-3

Ingredients: 

Black rice (Kavuni Arisi) - 1/3 cup (washed and soaked overnight)
Spring onions - 2 stems chopped (white part)
Tomato - 1 (big, grinded into a fine paste)
Ginger - 1 1/2 inch (finely chopped)
Carrot - 1/2 (chopped into medium size)
Beans - 6 (chopped)
Mushroom - 12 (chopped)
Italian seasoning - 1/2 tspn
Rosemary - 1/2 tspn
Pepper powder - 1/2 tspn
Spring onions - green part (chopped)
Water - 2 1/2 cup
Butter - 1 tspn
Salt to taste

Method:

1. Grab all the ingredients.

2. Switch on the IP. Press the saute mode. Add butter, white part of spring onions, ginger. Saute for 30 seconds.

3. Add all the veggies. Mix well.

4. Add the tomato puree, salt, italian seasoning, rosemary. Mix well.

5. Add black rice.

6. Add water (include the soaked water). Close the lid. Press the manual for 15 mins in High Pressure HP in sealed position. Then do Natural Pressure Release NPR.


7. Open the lid. Garnish with spring onions.

8. Yummy black rice soup is ready to serve.

Notes:

You can add any cruchy vegetables too.
