Is this purple colour kheer looks attractive?? Yes its not only attractive but tastes great too. As I said earlier in my BLACK RICE PUDDING, it has enormous health benefits. Not only healthy but very tasty when it is cooked as Kheer too. Here is the recipe....
Raw milk - 1 cup
Jaggery - 3/4 cup
Grated coconut - 1 tbsn
Cardamom - 1/4 tspn
Cashews - 5
Ghee - 2 tspn
2. Heat a pan. Add ghee. Add cashews. Fry until it gets golden color. Remove the cashews.
3. In the same pan add coconut. Fry till it gets golden color. Keep aside.
4. Add the soaked rice in a mixer jar without waterwate give it a pulse. It should be a coarse mixture.
5. Prepare the jaggery syrup by adding 1/2 cup of water in a pan with jaggery. Filter once it gets dissolved.
6. Add the coarsely grounded rice, 1 1/2 cups of water (including the soaked water). Press the porridge mode for 20 mins in High Pressure HP in sealed position. Then do Natural Pressure Release NPR.
7. Open the lid. Add milk, jaggery mixture. Press the saute mode. Let it cook for 10 mins. Mix now and then to avoid gets burnt. Add cardamom powder, cashews, grated coconut. Mix well.
8. Yummy and healthy black rice kheer is ready to serve.
You can use boiled milk too.

Notes:
You can add coconut milk atlast for rich taste.You can use boiled milk too.
