Kidney Beans Sundal (Rajma Sundal)

As the name suggests kidney beans plays a vital part in functioning kidney that controls the blood sugar, combats diabetes, lowers cholesterol and helps in weight reduction. I have already posted few chat / sundal items - peanut chat, Cowpeas sundal, peas chat.

Serving: 2

Ingredients:

Kidney beans - 1 cup (soaked in water for 8 hrs)
Asafoetida - 1/8 tspn
Coriander leaves - few (chopped)
Mustard seeds - 1/4 tspn
Uraddal - 1 tspn
Oil - 1 tspn
Salt to taste

To Grind:

Coconut - 2 tbsn
Ginger - 1 inch
Green chilli - 1
Curry leaves - 8

Method:

1. Grab all the ingredients.

2. Keep the vessel containing rajma with water covered in the inner pot with a cup of water.

3. Switch on the IP. Press the manual for 7 mins in High Pressure HP in sealed position. Then do Natural Pressure Release NPR. Open the lid. Strain the water from rajma and keep it aside.

4. Grind the ingredients for it to a coarse mixture without adding water.

5. Heat a pan. Add oil, mustard seeds, uraddal.

6. Add rajma, salt, grinded mixture, asafoetida. Mix well. Saute for a minute.

7. Garnish with coriander leaves.

8. Yummy healthy kidney beans sundal is ready to serve.
