Mutton chops is a tasty dish that too when adding a freshly grinded spices gives yummy taste. I have already posted few mutton recipes...
MUTTON BONES SOUP
DINDUGAL THALAPPAKATTI MUTTON BIRIYANI
CLASSIC SOUTH INDIAN STYLE MUTTON BIRIYANI
Shallots - 12 (chopped)
Turmeric - 1/4 tspn
Curry leaves - few
Sesame oil - 2 tspn
Salt to taste
Red chilli - 3
Kashmiri chilli - 3
Ginger - 1 inch
Garlic - 5 (big)
Coriander seeds - 1/2 tbsn
Cumin seeds - 1 tspn
Fennel seeds - 1 tspn
Peppercorns - 1 1/2 tspn
Cinnamon - 1 inch
Cloves - 3
2. Grind the ingredients for it into a fine paste by adding a little water.
3. Switch on the IP. Add oil. Add shallots and saute till it becomes light golden brown.
4. Add mutton chops, turmeric, salt and saute for a minute.
5. Add the grinded paste and saute for a minute.
6. Add 1/2 cup of water.
7. Close the lid. Press the manual for 30 mins in High Pressure HP in sealed position. Then do Quick Release QR after 5 mins (L0:05).
8. Open the lid. If you like to have it as a gravy consistency it's ready to consume. But am going to make it a dry roast. So press the saute mode till the gravy becomes more thick.
9. Once the water content has completely gone, transfer this to an iron kadaai or pan.
10. Roast it well. Garnish with curry leaves.
11. Yummilicious roasted mutton chops is ready to serve.

Grated coconut - 2 tbsnRed chilli - 3
Kashmiri chilli - 3
Ginger - 1 inch
