Baby Potato fry

This is an addictive recipe that goes well with Sambar, rasam and curd rice. Cooking the baby potatoes in the instant pot gives a perfectly cooked potatoes every time. And also this one is a simple fry with a flavor of carom / ajwain seeds. I have already posted simple potato fry and potato curry for variety rice. Check out that too.

Ingredients:

Baby potato - 9
Red chilli powder - 1 tspn
Turmeric - 1/4 tspn
Mustard seeds - 1/4 tspn
Ajwain - 1/8 tspn
Curry leaves - few
Asafoetida - 1/8 tspn
Oil - 3 tspn
Salt to taste

Method:

1. Grab all the ingredients. Boil the potatoes in IP. Place the potatoes over the trivet with a cup of water in the inner pot. Press the manual for 4 mins in High Pressure HP in sealed position. Then do Natural Pressure Release NPR.




2. Open the lid. Peel the skin from the potatoes.

3. Heat a kadaai. Add oil, mustard seeds, ajwain seeds.

4. Add turmeric, salt, red chilli powder, asafoetida.

5. Add potatoes and fry it in a medium flame until it gets roasted. Add curry leaves.

6. Baby potato fry is ready to serve.
