Beetroot Celery Podi Rice (Lunchbox Rice/No Onion No Garlic Rice)

Cooking time: 10 mins

Serving: 2-3

Ingredients:

Sonamasoori Rice - 3/4 cup
Beetroot - 1 cup (grated)
Celery - 2 stems (chopped)
Cumin seeds - 1 tspn
Turmeric - 1/4 tspn
Coriander leaves - few (chopped)
Oil - 3 tspn
Salt to taste

To roast and grind:

Grated Coconut - 2 tbsn
Coriander seeds - 2 tspn
Black uraddal - 2 tspn
Peppercorns - 1 tspn

Method:

1. Grab all the ingredients.

2. Cook the rice in IP for manual 6 mins in High Pressure HP in sealed position. Then do Natural Pressure Release NPR. Open the lid. Fluff the rice. Keep it aside.



3. In the meantime dry roast the ingredients one by one for it and grind it into a fine powder.



4. Heat a kadaai. add oil, cumin seeds. Add celery. Saute for 2 mins.


5. Add beetroot, salt, turmeric. Saute for about 5 mins until it gets cooked in medium flame.

6. Add cooked rice, grinded powder. Mix well. Add coriander leaves.

7. Beetroot Celery Podi Rice is ready to serve.

Notes:

You can have pappad as a side dish.

    1. Adding Celery gives a good bit texture and also a mild flavours to the rice. You can add other veggies like peas, capsicum.
