Ingredients:
Bittergourd - 3 (small size, about 1 cup finely chopped)
Tomato - 1 big size (finely chopped, if small add 2 tomatoes)
Garlic - 2 cloves (finely chopped, optional)
Turmeric powder- 1/4 tspn
Sambar powder - 2 tspn
Tamarind paste - 1 1/2 tspn
Jaggery - a big gooseberry size
Mustard seeds - 1/2 tspn
Curry leaves - few
Sesame oil - 2 tbsn
Salt to taste
Method:
1. Heat a Kadaai. Add oil. Add mustard seeds.
2. Once it splutters add bittergourd, garlic. Saute well for about 7-10 mins in medium flame so that the vegetable almost gets cooked in the oil itself. The color gets slightly changed to pale green too at this time.
3. Add turmeric powder and salt. Mix well.
4. Add tomatoes. Saute till it becomes mushy.
5. Now add the sambar powder. Saute till the raw smell goes.
6. Add tamarind paste, jaggery. Mix well. Cook for another 3-5 mins.
7. Add curry leaves. Switch off.
8. Bittergourd thokku is ready to serve.
Notes:
You can add onions also to get more quantity.
Don't add water at any time. If you want to add just finish it within 2 days.
