Instant pot Kambu saadham /Kammagkoozh (Pearl Millet Rice)

We get this Pearl Millet frequently nowadays in our place. I already did this recipe four times but didn't add in the blog. So now it's the time to do....Many of my friends too asked for this recipe that is easy and simple to prepare and at the same time very very nutritious that can be served as a healthy n filling breakfast in busy morning. Check out my other MILLET RECIPES too.....I have done both in Instant pot and Pressure cooker. So posting both pictures here.

Cooking time: 30 mins

Ingredients:

Pearl Millet - 1 cup
Buttermilk as needed
Water - 2 1/2 cups
Salt to taste

Method:

1. Wash the Pearl millet thrice and soak it overnight.

2. Drain the water completely. Then add the millet in a mixer jar and grind it coarsely. If you have broken one then no need of grinding.

3. Add water in the pot, if cooker then add water to it. When it starts boiling add the grinded mixture. Add little salt. Stir it . It will be watery. After 10-15 mins it starts to become semi consistency.

4. At this stage close the lid. Press the Pressure cook mode for 12 mins in High Pressure HP in sealed position. Then do Natural Pressure Release NPR. For cooker method put the whistle. Cook it for 5-6 whistles. Switch off.

5. Once the pressure is completely gone open the instant pot and cooker lid. It may look watery. Don't stir it now. Allow it to cool down completely. You can take the cooked rice when it becomes warm and serve it with any spicy Curry like garlic kuzhambhu or fish curry.

6. It may take two hours. After that take a ladle dipped in water, take a full ladle of cooked millet and start making balls with ur hands. Otherwise you can keep it as it is and fill the water over the cooked rice.

7. Pour it a wide bowl filled with water. Do the same with the rest of it. Keep it outside for two days. Do not refrigerate.

8. Now it gets fermented. You can keep it in the fridge and use it. You can have the water by adding little salt.

9. Take the balls as needed then add buttermilk, salt and mix well using hands or a spatula.

10. Kammagkoozh is ready to serve. You can add shallots or chopped onions in this n serve.

Notes:

You can have this koozh with dried chillies or pickle.
Most Pearl millet will take 3 cups of water (for 1 cup) to cook. The variety I used need 2 1/2 cups.
