We usually prepare adai with rice, dal mixture and with some other spices. I added little millet instead of rice and added few vegetables to make it more tasty. I have already posted few DOSA / UTHAPPAM / ADAI varieties and MILLET RECIPES... Check out that too....
Tuvar dal - 1/4 cup
Channa dal - 1/4 cup
Moong dal - 1 tbsn
Uraddal - 1 tbsn
Carrot - 1 (grated)
Cabbage - 1/2 cup (chopped)
Mint leaves - 1/4 cup (chopped)
Coriander leaves - 1/4 cup (chopped)
Onion - 1 (chopped)
Red chillies - 5
Ginger - 1 inch
Cumin seeds - 1/2 tbsn
Fennel seeds - 1/2 tbsn
Asafoetida - 1/4 tspn
Oil as needed for cooking Adai
Salt to taste
2. Grind red chillies, cumin seeds, fennel seeds, asafoetida, Ginger in a mixer jar. To this add the dal mixture and grind it to a smooth paste. Transfer to a bowl.
3. Add the soaked millet and grind it to a smooth batter. Transfer to the dal mixture.
4. Add all the vegetables, mint, coriander, onion in to the batter. Mix well. Now the Adai batter is ready.
5. Heat a dosa tawa. Pour a ladder full of batter and spread it into a thick uthappam. Drizzle oil around the edges. Let it cook for a minute.
6. Flip the other side and cook for another minute.
7. Little Millet Vegetable Adai is ready to serve. You can serve it with any chutney of your choice.
You can add coconut shredded or a small bit pieces to make it more tasty.
Cooking time: 2 mins per Adai
Serving: 8-10 adais
Ingredients:
Little Millet - 1/2 cup (roasted)Tuvar dal - 1/4 cup

Method:
1. Wash and soak the millet in a bowl for 1 hr. Wash and soak all the dals together in a bowl for 1 hr.3. Add the soaked millet and grind it to a smooth batter. Transfer to the dal mixture.
4. Add all the vegetables, mint, coriander, onion in to the batter. Mix well. Now the Adai batter is ready.
6. Flip the other side and cook for another minute.
7. Little Millet Vegetable Adai is ready to serve. You can serve it with any chutney of your choice.
Notes:
You can use other millets like foxtail millet, barnyard millet too.You can add coconut shredded or a small bit pieces to make it more tasty.
