After inspired by my friend Pavithra, I started including saatvik cooking in my diet often. She has a lot of ayurvedic recipes in her blog that tastes yummy too. I prepared this recipe based upon my taste buds but followed all the do's and dont's as per Ayurvedic cooking....First it was little difficult to cook a dish without onions, tomato, garlic, red chilli, green chillies, potatoes, bell peppers, mushrooms and egg plants.... But later I learnt to cook without these that makes your body very happy while taking these kind of foods....
Carrot - 1/2 (chopped)
Beans - 10 (chopped)
Frozen peas - 2 tbsn
Cauliflower - 1 cup (small florets)
Ginger - 1 tbsn (grated)
Mint leaves - few (chopped)
Coriander leaves - few (chopped)
Turmeric powder - 1/4 tspn
Coriander powder - 2 tspn
Cumin powder - 1 tspn
Pepper powder - 3/4 tspn
Kalonji - 1/8 tspn
Bayleaf - 2
Cinnamon - 1 inch
Cloves - 4
Cardamom - 2
Staranise - 1
Oil - 2 tspn
Ghee - 1 tspn
Salt to taste
Almonds - 4 (soaked and peeled)
Poppy seeds - 1/2 tspn
Fennel seeds - 3/4 tspn
2. Heat a pan. Add oil, ghee. Add kalonji, bayleaf, cinnamon, cloves, staranise, cardamom.
3. Add fennel bulbs and saute for a minute.
4. Add ginger and saute till the raw smell goes.
5. Add carrot, beans and saute for few seconds.
6. Add cauliflower, peas and mix well.
7. Add coriander powder, turmeric powder, cumin powder and pepper powder. Mix well until the masala coats well.
8. Add mint leaves and mix well.
9. Add 1 cup of water. Close the lid. Let it cook until it's cooked 75%.
10. By the meantime grind the ingredients for it into a fine paste by adding little water.
11. Add this paste once the veggies cooked. Let it cook for 3-5 mins.
12. Switch off. Garnish with coriander leaves.
13. Saatvik Mixed Vegetable Kuruma is ready to serve.
