No Onion No Garlic Vallaarai Chutney Rice ( Brahmi Rice )

This is a kind of Ayurvedic recipe which recommend not to use onion, garlic, tomato, red chillies, green chillies. The spicyness comes from ginger and peppercorns. I used millets for this recipe. Ingredients:

Roasted millet - 1/2 cup
Brahmi leaves - 1 cup
Ginger - 1/2 inch
Cumin seeds - 1/2 tspn
Peppercorns - 1/2 tspn
Uraddal - 1/2 tbsn
Channadal - 1/2 tbsn
Kodampuli paste (Garcinia Cambogia) - 1/2 tspn
Grated coconut - 1/4 cup
Asafoetida - 1/8 tspn
Sesame oil - 2 tspn
Salt to taste

Method:

1. Grab all the ingredients.

2. Cook the millets in IP with water 1/2:1 ratio for 6 mins in High Pressure HP in sealed position. Then do Natural Pressure Release NPR. Open the lid. Fluff it with a fork and keep aside.



3. Heat a kadaai. Add oil, uraddal, channadal. When it gets roasted add cumin seeds and peppercorns, ginger. Saute for few seconds.


4. Add brahmi leaves, salt. Saute for a minute.

5. Add grated coconut, asafoetida. Mix well. Switch off.

6. Add kodampuli paste. Once it gets cool down grind it into a coarse or fine paste. Chutney is ready.

7. Add this chutney to the cooked millet. Mix well.

8. Healthy Vallaarai Chutney Rice is ready to serve.
