Proso millet has a good source of antioxidants that helps in antiageing, reduces the risk of diabetes and also contains calcium that helps in strengthening of bones and teeth. Millets can be prepared easily in a pan tastily as we do for other dishes. Check out my other MILLET RECIPES and MUSHROOM RECIPES too....
Mushroom - 1 cup (chopped)
Frozen peas - 1/2 cup
Onion - 1 (small, 1/2 if big size)
Tomato - 1 (small, chopped)
Green chilli - 2
Ginger garlic paste - 1/2 tbsn
Mint leaves - 1/2 cup (chopped)
Coriander leaves - 1/4 cup (chopped)
Turmeric - 1/4 tspn
Red chilli powder - 1 tspn
Cinnamon - 1 inch
Cloves - 2
Cardamom - 1
Staranise - 1
Fennel seeds - 1/2 tspn
Oil - 1 tbsn
Ghee - 1 tbsn
Salt to taste
2. Heat a pan. Add oil, ghee. Add cinnamon, cloves, fennel seeds, cardamom, staranise.
3. Add oil, ghee, bayleaf, cinnamon, cloves, cardamom, staranise, fennel seeds. Add onions, green chillies and saute till it becomes light golden brown.
4. Add ginger garlic paste and saute till the raw smell goes.
5. Add tomatoes and saute till it becomes mushy.
6. Add mushroom, peas, salt, turmeric, red chilli powder. Saute till it becomes like a thick masala. The water content should be completely evaporated.
7. Add mint leaves, coriander leaves.
8. Add 1 1/2 cups of water. Mix well.
9. Once the water starts boiling add the millet. Mix well.
10. Close it with a lid. Cook it in a slow flame. It will take around 12-15 mins to cook. Check in between and mix it.
11. Yummy mushroom Millet masala rice is ready.
You can serve it with raita.
