Instant Pot Spring Onions Peanut Sambar (IP Vengaayathaal Verkadalai Sambar)

SAMBAR POWDER

Serving: 4

Ingredients:

Tuvardal /split pigeon peas - 1/4 cup (washed and soaked for 1 hr)
Raw peanut - 1/4 cup (washed and soaked for 2 hrs, if one hr then soak it in hot water)
Spring Onions - 4 stems (chopped)
Tomato - 1 (chopped)
Green chilli - 2 (slitted)
Red chilli - 2
Turmeric - 1/4 tspn
Sambar powder - 1/2 tbsn
Asafoetida - 1/4 tspn
Tamarind paste - 1 tspn
Mustard seeds - 1/4 tspn
Fenugreek seeds - 1/8 tspn
Oil - 1 tbsn
Salt to taste

Method:

1. Grab all the ingredients.

2. Switch on the IP. Press the saute mode. Add oil, mustard seeds, fenugreek seeds, red chilli.

3. Add spring onions, green chillies and saute for a minute.

4. Add tomato and saute till it becomes mushy.

5. Add peanuts, salt, turmeric and saute for about 30 seconds.

6. Add tuvardal. Mix well.

7. Add 2 cups of water. Mix well.

8. Close the lid. Press the manual for 12 mins in High Pressure HP in sealed position. Then do Natural Pressure Release NPR.

9. Open the lid. Mix well using a wooden spatula. Press the saute mode. Add tamarind paste and sambar powder. Let it cook for 3 mins. Finally add asafoetida.

10. Switch off. Healthy sambar is ready to serve with rice.

Notes:

This sambar suits for both rice and tiffen items.
You can add tamarind extract from a small gooseberry size of tamarind instead of tamarind paste.
