Special Carrot Peas Rice (Lunchbox Recipe)

As the name says special carrot peas rice this recipe is a sauteing of carrots and peas with usual seasoning with an additional roasted and grinded powder that makes it an added flavour to the rice. When I saw the recipe in a TV show I thought of sharing with you all by adding few extra ingredients. Here is the recipe....

Cooking time: 15 mins

Serving: 2-3

Ingredients:

Rice - 2 cups (cooked)
Carrot - 1 cup (grated)
Frozen peas - 1/4 cup
White part of spring onions - 2 stem
Ginger - 1 inch (chopped lengthwise)
Mustard seeds - 1/4 tspn
Uraddal - 1 tspn
Curry leaves - few
Coriander leaves - few (chopped)
Spring onions (green part) - 2 stems
Salt to taste

To roast and grind:

Coriander seeds - 1/2 tbsn
Cumin seeds - 1/4 tbsn
Fennel seeds - 1/2 tspn
Red chilli - 2

Method:

1. Grab all the ingredients.

2. Cook the rice in IP (I did PIP method for dal and rice. So I did manual 12 mins). Keep it aside.


3. Dry roast the ingredients for it and grind it into a fine powder.


4. Heat a kadaai. Add oil, mustard seeds and uraddal.

5. Add white part of spring onions, ginger, curry leaves and saute for about 10 seconds.

6. Add carrot, peas and saute for about 30 seconds.

7. Add grinded powder, salt and saute for few seconds.

8. Add rice. Mix well. Add coriander leaves and spring onions.


9. Carrot Peas rice rice is ready to serve.

Notes:

You can do the same recipe with basmati rice too.
