Masala veggie poha / Masala kaaikari aval

This is a super filling breakfast with a good combination of vegetables with red poha which has more fibre content.

Serving: 2

Ingredients:

Red poha - 1 cup (236 ml)
Onion - 1/2 (medium size, finely chopped)
Carrot - 1/4 cup (finely chopped)
Beans - 1/4 cup (finely chopped)
Peas - 1/4 cup
Ginger - 1 inch (finely chopped)
Red chilli - 2 (broken into small pieces)
Turmeric - 1/4 tspn
Red chilli powder - 1/2 tspn
Coconut - 1 1/2 tbsn (shredded)
Peanuts - 1 tbsn
Lemon juice - 1/2 tspn
Mustard seeds - 1/4 tspn
Uraddal - 1/2 tspn
Cumin seeds - 1 tspn
Curry leaves-few
Coriander leaves - few (chopped)
Oil - 2 tspn
Salt to taste

Method:

1. Grab all the ingredients.

2. Wash the poha twice and soak for about 5 mins. Then drain the water completely.

3. Heat a kadaai. Add oil, mustard seeds, uraddal.

4. Add cumin seeds and peanuts.

5. Add onions, ginger, red chillies. Saute till the onion becomes transparent.

6. Add carrot, beans and peas. Saute for 2 mins.

7. Add salt, turmeric and red chilli powder. Saute for a minute.

8. Add the poha. Mix well. Close it with a lid for one minute.

9. Add the lemon juice, curry leaves and coconut. Mix well.

10. Garnish with coriander leaves.

11. Masala veggie poha is ready to serve.

Notes:

You can do the same with normal white poha.
If you are using thin poha don't soak it more than 2 mins.
