Gluten free Adai (Quinoa Adai)

Many people prefer gluten free food nowadays. This is one of the varieties for those with nice flavours added.

Serving: 3-4

Ingredients:

Quinoa, raw rice (mixed altogether) - 1/2 cup (each 1/4 cup)
Tuvar dal - 1/4 cup
Channa dal - 1/4 cup
Uraddal - 1 tspn
Moongdal - 1 tspn
Red chilli - 5
Cumin seeds - 1 tbsn
Fennel seeds - 1 tbsn
Peppercorns - 1/2 tbsn
Garlic - 5 cloves (medium size)
Asafoetida - 1/2 tspn
Coconut - 1/2 cup (finely chopped)
Onion - 1 (medium size, finely chopped)
Curry leaves - few
Coriander leaves - few (chopped)
Mint leaves - few (chopped)
Oil for cooking Adai
Salt to taste

Method:

1. Grab all the ingredients.

2. Wash and soak all the dals together.Do the same for rice, quinoa mixture. Soak for about 2 hours.

3. In a mixer jar add cumin seeds, fennel seeds, peppercorns, red chillies, salt, asafoetida and garlic. Grind it without adding water.


4. Add the quinoa rice mixture into it. Grind it finely with water. Transfer to a bowl. Now add the dal mixture into the mixer jar and grind into a fine paste. Add this to the bowl.

6. Mix all together. Add coconut, onions, curry leaves, coriander leaves and mint leaves.

7. Add water required and mix well like a thick dosa batter consistency.

8. Heat an iron tawa. Spread a ladle full of batter like uthappam. Drizzle oil around the edges.

9. After a minute flip the adai and cook again for a minute.

10. Gluten free adai is ready to serve.

Notes:

You can serve this adai with coconut chutney.
Adding coconut pieces gives a nice bite while eating, so dont skip that.
