There are so many varieties of uthappam and dosas. Today I tried with mushrooms and peas added with spinach and lots of coriander leaves that tasted yummy.
Onion - 1/2( thinly sliced)
Frozen peas - 1/4 cup
Garlic - 3 pods (sliced)
Spinach - 10 leaves (chopped)
Coriander leaves - 1/4 cup
Turmeric - 1/4 tspn
Red chilli powder - 1/2 tspn
Garam masala - 1/4 tspn
Pepper powder - 1/4 tspn
Oil - 2tspn
Salt to taste
2. Heat a kadaai. Add oil, garlic. Saute until the garlic becomes light brown.
3. Add onions. Saute for a minute.
4. Add peas, mushrooms, turmeric, salt, pepper powder, garam masala, red chilli powder. Saute till the masala coats well.
5. Add spinach and saute for a minute.
6. Switch off and add the coriander leaves and mix well. The topping is ready now.
7. Heat a tawa. Prepare dosa or uthappam as usual. Spread the topping over it.
8. Enjoy the dosa with any of your favorite chutneys.
