Instant Pot Dhideer Thakkali Kuzhambhu (Tomato Curry)

As the name suggests, this tomato curry can be prepared in a jiffy when you have no vegetables in your kitchen. This  is one of the easiest curry that goes well with both rice and tiffin varieties like idly and dosa that can be prepared with very few ingredients. Check out my VEG CURRIES AND GRAVIES.... Ingredients:

Tomato - 2 (big)
Onion - 1/2 cup (chopped)
Garlic - 3 (finely chopped)
Green chilli - 2 (slitted)
Grated coconut - 1/4 cup
Fennel seeds - 1 tspn
Sambar powder - 1 tbsn or coriander powder - 2 tspn and chilli powder - 1 tspn
Turmeric powder - 1/4 tspn
Curry leaves - few
Coriander leaves - few (chopped)
Mustard seeds - 1/2 tspn
Sesame oil - 2 tspn
Salt to taste

Method:

1. Grab all the ingredients.

2. Grind coconut, fennel seeds, sambar powder, turmeric, salt, tomato into a fine paste. Keep it aside.

3. Switch on the IP. Add oil, mustard seeds.

4. Add onions, garlic, green chillies, curry leaves. Saute till the onions becomes pink.

5. Add the grinded paste, few coriander leaves with a cup of water. Mix well.

6. Close the lid. Press the manual for 3 mins in High Pressure HP in sealed position. Then do Natural Pressure Release NPR.

7. Open the lid. Add coriander leaves.

8. Easy tangy tomato curry is ready to serve.
