Instant pot Cabbage Peas Rice

Cabbage Peas rice is the one with mild flavours and spices that can be packed in your lunch box and also for kids lunchbox. You can skip the onions if you wish and can be prepared and served for temple prasaad (one of my blog followers requested for few recipes that can be served for temples). Cooking time: 12 mins

Serving: 2-3

Ingredients:

Sona masoori rice - 1 cup (200 ml)
Cabbage - 3 cups (chopped)
Frozen peas - 1/2 cup
Onion - 1/2 (chopped)
Green chilli - 3
Ginger - 1 inch
Mint leaves - 1/4 cup
Coriander leaves - 1/2 cup (chopped)
Mustard seeds - 1/2 tspn
Bayleaf - 2
Turmeric - 1/4 tspn
Oil - 2 tspn
Ghee - 2 tspn
Salt to taste

Method:

1. Grab all the ingredients. Wash and soak the rice for 1/2 an hr.

2. Grind the green chilli and ginger into a coarse mixture without adding water. Keep it aside.

3. Switch on the IP. Add oil, ghee, bayleaf and mustard seeds.

4. Add mint leaves, onion. Saute well until the onion becomes pink.

5. Add the grinded mixture. Saute till the raw smell goes.

6. Add cabbage, peas, salt, turmeric. Saute for a minute.


7. Add 2 cups of water. Mix well.

8. Add the rice, coriander leaves. Mix well.

9. Close the lid. Press the pressure cook or manual for 5 mins in High Pressure HP in sealed position. Then do Quick Release QR after 5 mins (L0:05).


10. Open the lid. Mix gently.

11. Cabbage Peas Rice is ready to serve.

Notes:

You can use basmati rice too.
