Instant Pot Mushroom Soup (IP Kaalaan Saaru)

Mushroom soup is a good choice for vegetarians who like to have a spicy soup on a cold winter day. The taste is similar to chicken soup prepared with a freshly grinded powder that adds up the taste to the soup. Serving: 2

Ingredients:

Mushroom - 1 1/2 cup (chopped into chunks)
Shallots - 10 (crushed)
Tomato - 1 (small, grinded into a fine paste)
Ginger garlic paste - 1 tspn
Cumin seeds - 1/2 tspn
Turmeric - 1/4 tspn
Curry leaves - few
Coriander leaves - few (chopped)
Sesame oil - 2 tspn
Salt to taste

To roast and grind:

Coriander seeds - 1/4 tspn
Cumin seeds - 1/4 tspn
Fennel seeds - 1/4 tspn
Peppercorns - 3/4 tspn
Red chilli - 1
Fried gram - 1 tspn (optional)

Method:

1. Grab all the ingredients.

2. Dry roast all the ingredients for it and grind it into a fine powder.


3. Switch on the IP. Add oil, cumin seeds.

4. Add shallots, curry leaves. Saute till it becomes light golden brown.

5. Add ginger garlic paste and saute till the raw smell goes.

6. Add tomato puree and saute till the raw smell goes.

7. Add mushroom, salt, turmeric, grinded powder. Saute for 30 seconds.

8. Add 2 cups of water. Mix well. Add few coriander leaves.

9. Close the lid. Press the manual for 5 mins in High Pressure HP in sealed position. Then do Natural Pressure Release NPR.

10. Open the lid. Garnish with coriander leaves.

11. Delicious mushroom soup is ready to serve.

Notes:

If you don't have shallots then add finely chopped onions. But shallots gives a nice taste when added in soups.
