Aapam always tastes delicious with coconut milk or a spicy curry, right?? This is a purple coloured aappam that attracts both the kids and adults which is even more a healthy version from our usual rice Aappam. You can grind the batter in a mixie easily and quickly to prepare this. Here is the recipe goes...
Sonamasoori rice or raw rice - 1/2 cup
Idly rice or boiled rice - 1/2 cup
Uraddal - 2 tbsn
Fenugreek seeds - 1/4 tspn
Poha - 1/4 cup
Grated coconut - 1/4 cup
Eno salt - 1 tspn
Oil for aappam
Salt to taste
2. Wash and soak the uraddal in a bowl. Wash and soak all the three rice, fenugreek, poha in a bowl. Or else you can soak altogether in a bowl and soak it for 4-5 hrs.
3. Grind it into a smooth batter by adding the coconut. Transfer into a bowl. Add salt. Mix well using your hands. The batter consistency must be watery but not too watery. Let it ferment for 6-8 hrs.
4. Heat an aappam pan. Mix the batter. Add Eno salt at the time of preparing aappam.
5. Pour a ladle full of batter. Swirl it around as we do for normal aappam.
6. Drizzle oil around the edges. Close it with a lid. Let it cook for 1 min or until it gets cooked and the edges gets crispy.
7. Using a spatula remove the aappam from the pan.
8. Enjoy the purple coloured aappam with coconut milk or a spicy curry or a stew.
