Black rice is very rich in anti oxidants, fights against inflammation, weight management, keeps the heart and liver healthy and has properties. Compare to brown, white rice black rice has the highest amount of protein and double the fibre content of brown rice with lots of iron content. So try to start taking black rice in your diet with this delicious pudding. I have tasted this recipe during my school days in my periamma's house. And after many years tasted again in my friend's house during potluck. So thought of sharing this Chettinad famous recipe with all in my favorite Instant Pot.....Look out my Porridge recipes too...
Palm jaggery (karuppatti) - 1/2 cup
Grated coconut - 2 tbsn
Cardamom powder - 1/4 tspn
Ghee - 1 tspn
Salt a pinch
2. Add the soaked black rice, 1 1/2 cups (include the soaked water too) of water.
3. Close the lid. Switch on the IP. Press the porridge mode that shows 20 mins in High Pressure HP in sealed position. Then do Natural Pressure Release NPR.
4. Open the lid.
5. Let's dissolve the palm jaggery with very little water (about 2 tbsn). Heat the mixture and strain with a filter to remove the impurities.
6. Add the jaggery mixture to the rice. Add coconut, cardamom powder, salt, ghee. If you feel watery press the saute mode then you will get the desired consistency in few minutes.
7. Healthy black rice pudding is ready to serve.
