Proso millet (Pani varagu) is a rich source of phosphorus and also has iron, zinc, fibre, vitamin B6 that are needed for our day to day body functioning. When I saw the Proso millet flour in our groceries I thought of making a kind of uthappam with some vegetables that makes it more healthy.
Dosa batter - 1 cup
Onion - 1 (small, finely chopped)
Green chilli - 3 (finely chopped)
Carrot - 1/4 cup (grated)
Beans - 5 (finely chopped)
Cabbage - 1/4 cup (finely chopped)
Curry leaves - few
Coriander leaves - few (chopped)
Oil to make uthappam
Salt to taste
2. Add all the ingredients except oil. Add water to get a dosa batter consistency and mix well.
3. Heat a dosa tawa. Spread a ladle full of batter like uthappam. Add oil around the edges.
4. Flip the other side after 2 mins.
5. You can sprinkle idly chilli / milagai powder over the uthappams if you like.
6. Heart healthy uthappams are ready to serve.
I tried these uthappam without adding dosa batter. It was very dry. So mixing of dosa batter tastes good.

You can serve with some spicy chutneys of your choice.I tried these uthappam without adding dosa batter. It was very dry. So mixing of dosa batter tastes good.
