This chicken curry is one of the best combos for idly, dosas made with all freshly grounded spices😋😋. I prepared with Cornish hens available here that is very tender but tastes like Naatukozhi / Country chicken that we get in our hometown or village side. Shallots - 10
Onion - 1/2 (medium size, finely sliced)
Tomato - 1 (finely sliced)
Curry leaves - few
Turmeric - 1/4 tspn
Sesame oil - 3 tbsn
Salt to taste
Ginger - 1 inch
Garlic - 5 (small)
Cinnamon - 1 inch
Cloves - 2
Fennel seeds - 1/2 tbsn
Kuskus - 1/4 tspn
Cumin seeds - 1/2 tspn
Peppercorns - 1 tspn
Staranise - 1
Red chilli - 6
Curry leaves - few
2. Switch on the IP. Press the saute mode. Add all the ingredients mentioned for roasting except coconut without oil. Saute for about 4-5 mins until nice aroma comes and the color changes.
3. Add coconut and roast for few more mins until it becomes light golden brown.
4. Switch off. Once it cools down grind it into a fine paste.
5. Press the saute mode. Add oil, onions and saute till it becomes transparent.
6. Add the crushed shallots and saute for few more mins.
7. Add the tomato, salt, turmeric. Saute for about 3 mins.
8. Add the chicken and saute for another 2 mins. Add the grounded paste and mix well.
9. Add a cup of water.
10. Close the lid. Press the manual or Pressure cook mode for 6 mins in High Pressure HP in sealed position. Then do Natural Pressure Release NPR.
11. Open the lid.
12. Aromatic country style chicken curry is ready to serve with hot n soft idlys.
This curry well goes with parotta, dosa, naan, pooris too.

Notes:
You can dry roast all the ingredients in stove top then u can follow the other steps in instant pot.This curry well goes with parotta, dosa, naan, pooris too.
