Triple C soup(Chickpea, carrot, cucumber soup)

This soup looks appetizing, right?? Yeah it not only looks appetizing but also yummy and healthy soup. As we are adding chickpeas it will be a stomach filling soup too.

Cooking time: 15 mins

Serving: 2-3

Ingredients:

Boiled chickpeas - 1/2 cup
Carrot - 1/2 (grated)
Cucumber - 1 (chopped)
Onion - 1/4 (chopped)
Tomato - 1/2 (sliced)
Ginger - 1 inch(chopped)
Italian seasoning - 1/4 tspn
Pepper powder - 1/2tspn
Coriander leaves - few (chopped)
Butter - 1tspn
Salt to taste

Method:

1. Grab all the ingredients.

2. Heat a pan. Add butter, onions, ginger. Saute for a minute.

3. Add carrot and saute for few seconds.

4. Add cucumber and salt. Saute for another few seconds.

5. Add chickpeas and tomato. Saute for 2 mins.

6. Add pepper powder, Italian seasoning.

7. Add 1 cup of water. Cook for 5 mins by closing a lid. Switch off.

8.  Drain the stock from the mixture. Cool down the mixture and grind it smoothly.


9. Add the grinded mixture to the stock. Add 1 1/2 cup of water. Cook for 5 mins until it gets heated well.

10. Garnish with coriander leaves.

11. Hot n healthy soup is ready now.

Notes:

You can add either pepper powder or oregano alone if you don't have Italian seasoning. But adding oregano or Italian seasoning will definitely tastes good.
