Celery pasta soup (pressure cooker method)

I liked to try the combination of celery and pasta as a soup with a mild Indian flavor and the outcome was really nice. The uncooked pasta while cooking in the pressure cooker (without leaving the starch) tastes good.

Cooking time: 20 mins

Serving: 2-3

Ingredients:

Elbow pasta - 1/2 cup
Spring onions (white part) - 1/4 cup (chopped)
Carrot - 1/4 cup (chopped)
Beans - 1/2 cup (chopped)
Celery - 3/4 cup (chopped)
Tomato - 1/2 (chopped into big chunks)
Ginger - 1 inch (chopped)
Garlic - 2 big cloves (chopped)
Coriander powder - 2 tspn
Pepper powder - 1 tspn
Butter - 1 tbsn
Spring onions (green part) - few (chopped)
Salt to taste

Method:

1. Grab all the ingredients.

2. Heat a pressure cooker. Add butter, garlic, ginger. Saute till it becomes light golden brown.

3. Add onions and saute for a second.

4. Add celery, carrot, beans. Saute for few seconds.

5. Add coriander powder.

6. Add pasta.

7. Add 4 cups of water. Close the lid and cook for 4 whistles.

8. Once the pressure is released open the cooker. Add tomatoes and pepper powder with spring onions.

9. Piping hot pasta soup is ready to serve.

Notes:

Adding vegetables with pasta always provides you a wholesome food for your breakfast or dinner. You can try the same with other pasta varieties too.
Adding tomatoes atlast gives a nice tangy bite. Also try to add round tomatoes that gives tangy taste but not roma / bangalore tomatoes.
