This recipe is a colorful uthappam that can be served not only for breakfast or dinner but also can be packed for lunchbox because it remains soft for many hours.
Green bell pepper - 2 tbsn (finely chopped)
Yellow bell pepper - 2 tbsn (finely chopped)
Red bell pepper - 2 tbsn (finely chopped)
Mustard seeds - 1/4 tspn
Cumin seeds - 1/2 tspn
Onion - 1/2 cup (thinly sliced)
Red chilli powder - 1 tspn
Coriander leaves - few (chopped)
Sesame oil - 2 tspn for masala
Salt to taste
2. Heat a pan. Add oil, mustard seeds, cumin seeds.
3. Add onions, red chilli powder and salt. Saute for 2 seconds.
4. Add all the bell peppers and saute for 2 seconds.
5. Switch off. Add coriander leaves. Mix well.
6. Pour this mixture to the dosa batter. Mix well.
7. Heat a tawa. Pour the batter like uthappam with oil around the edges. Close it with a lid.
8. Flip the other side and cook for few mins.
9. Colorful uthappam is ready to serve.
Adding sesame oil while preparing the masala makes the uthappam remains soft. So don't avoid it.
This can be served with coconut or mint chutney.
You can do like a mini uthappam to make your kids lunchbox more interesting.
