Egg masala recipe is the one that can be prepared in many ways. Here the main flavour comes from the cumin and pepper powder that we add.
Onion - 1/2 (thinly sliced)
Tomato - 1 (thinly sliced)
Kuzhambhu chilli powder - 1 tspn (or coriander powder - 2 tspn and red chilli powder - 1 tspn)
Cumin pepper powder - 1 tspn
Green chillies - 3
Fennel seeds - 1 tspn
Curry leaves - few
Coriander leaves - few (chopped)
oil - 2 tbsn
2. Heat a kadaai. Add oil. Add fennel seeds.
3. Add onion, green chillies and saute till it becomes light golden brown.
4. Add tomato, salt turmeric and saute till it becomes mushy
5. Add kuzhambhu chilli powder, cumin pepper powder and saute till it becomes like thick masala.
6. Add the eggs and mix till the masala coats well.
7. Add curry leaves and coriander leaves. Switch off.
8. Now the hot egg masala is ready.
For cumin pepper powder add take equal amount of cumin seeds and peppercorns and grind it in a mixer jar.
