Egg buruji (Muttai buruji)

I learnt this recipe when I was in Pune few years back. All the spice powders that we add to this recipe gives a nice taste. According to my taste buds egg buruji can go well only with rotis and parathas. If you don't have vegetables at home this recipe will helps you as a good combo.

Serving: 2-3

Ingredients:

Eggs - 3
Onion - 1 (finely chopped)
Tomato - 1 1/2 (finely sliced)
Ginger garlic paste - 1 1/2 tspn
Green chilli - 2 (finely chopped)
Turmeric - 1/4 tspn
Coriander powder - 1 1/2 tspn
Cumin powder - 1/2 tspn
Red chilli powder - 1 tspn
Pepper powder - 1/4 tspn
Garam masala - 1/2 tspn
Cumin seeds - 1/2 tspn
Oil - 2 tbsn
Coriander leaves - few (chopped)
Salt to taste

Method:

1. Grab all the ingredients.

2. Add oil. Add cumin seeds.

3.Add onions and green chillies. Saute till it becomes light golden brown.

4.Add ginger garlic paste and saute till the raw smell goes.

5.Add tomatoes and saute till it becomes mushy.

6.Add salt, turmeric, coriander powder, cumin powder, red chilli powder, pepper powder and garam masala. Saute till the raw smell of masala goes.

7.Add the cracked eggs. Mix well and saute now and then until the egg cooks to get lumps.


8.Garnish with coriander leaves and enjoy the hot buruji with your favorite rotis.

Notes:

Egg buruji can be served for any kind of stuffed parathas and plain rotis.
