Coriander pulao (kothamalli pulao)


This pulao is a one pot recipe that is very simple to do with a good taste.  Its a very nice choice for potluck, lunch box and other get together functions. Check out my pulao varieties too.

Cooking time: 30 mins

Serving: 2

Ingredients:

Basmati rice - 1 1/4 cup
Onion - 1 (medium, finely chopped)
Peas - 1/4 cup (I have used boiled peas)
Coconut milk - 1 cup
Bay leaf - 1
Ghee - 1 tbsn
Oil - 1 tbsn
Cashew - 6

To Grind:

Green chilli - 3
Coriander leaves - 2 cups (chopped)
Cinnamon - 1 inch
Cloves - 2
Cardamom - 1
Ginger - 1 inch
Garlic - 2 big cloves
Lemon juice - 1 tbsn
Sugar a pinch
Salt to taste

Method:

1. Grab all the ingredients.

2. Grind all the things mentioned above with a very little water like a paste.


3. Heat a pressure cooker. Add oil and ghee. Add bayleaf and cashews.

4. Once the cashews turns golden add onions and saute till it becomes light golden brown.

5. Add the paste and saute until it becomes like a thick masala.

6. Add boiled peas now (If using frozen peas u can add at this time).

7. Add the washed rice (I didn't soak, so adding 1 1/4: 2 1/2 cups of water- coconut milk is included).


8. Check for the salt and close the lid.

9. Once the pressure comes out then put the whistle and keep it in very low flame for 10 mins.

10. Switch off and serve the pulao with onion raita and chips.

Notes:

If you are diet conscious then skip the coconut milk and add only water.
