Instant Pot Vegetable Pulao

This is an easy and aromatic Pulao that can be done easily with few vegetables in coconut milk. Iam doing it in seeraga samba rice to get the rich flavours. You can do it in basmati rice too.... I have already posted VEG BIRIYANI AND PULAO VARIETIES.... Check out that too....

Ingredients:

Seeraga samba rice - 1 cup (200 ml)
Onion - 1 (small, chopped)
Green chilli - 2
Ginger garlic paste - 3/4 tbsn
Carrot - 1 (small, chopped)
Beans - 10 (chopped)
Frozen peas - 1/3 cup
Mint leaves - few
Coriander leaves - few (chopped)
Coconut milk - 2 cups (thin milk)
Cinnamon - 1 inch
Cloves - 4
Bayleaf - 2
Cardamom - 3
Oil - 2 tspn
Ghee - 3 tspn
Salt to taste

Method:

1. Grab all the ingredients.

2. Switch on the IP. Press the saute mode. Add oil, ghee, bayleaf, cinnamon, cloves, cardamom.

3. Add onions, green chillies. Saute until it becomes transparent.

4. Add ginger garlic paste and saute till the raw smell goes.

5. Add all the veggies and saute for few seconds.

6. Add mint leaves and saute for 2 seconds.

7. Add coconut milk. Add salt.

8. Add the washed rice and coriander leaves. Mix well.

9. Close the lid. Press the manual for 5 mins in High Pressure HP in sealed position. Then do Natural Pressure Release NPR.

10. Open the lid.

11. Enjoy the Vegetable Pulao with any spicy side dish or cauliflower coconut gravy.

Notes:

If you soak the rice then add 1 1/2 cups of water.
You can pack it in Lunchbox too.
