Instant Pot Nasi lemak (Malaysian Rice)

This is a famous Malaysian rice that can be prepared very easily with very few ingredients. All we need to dump the ingredients in IP and press the manual mode, then it will be ready....What the speciality of this rice is to be taken with a combination of a gravy which they usually call it as SAMBAL, cucumbers, roasted peanuts, boiled eggs to make it a yummy food that I felt. I prepared my own way of sambal with dried prawns. You can also have a spicy vegetarian gravy as a combo for this rice.... Check out my other BIRIYANI AND PULAO varieties too.....

Cooking time: 5 mins

Serving: 3-4

Ingredients:

Basmati rice - 2 cups
Coconut milk - 3 cups (thin)
Onion - 1 (small, thinly sliced)
Ginger - 1 inch (sliced into julien)
Lemongrass - 1 1/2 stick (chopped into 1 inch pieces)
Salt to taste

Method:

1. Grab all the ingredients. Wash and soak the rice for 30 mins.

2. Add all the ingredients into the pot. Check for the salt.

3. Switch on the IP. Press the manual for 5 mins in High Pressure HP in sealed position. Then do Natural Pressure Release NPR.

4. Open the lid. Mix gently.

5. Mild and flavourful Malaysian Rice is ready to serve with boiled eggs, roasted peanuts, cucumbers and dried prawns gravy.

Notes:

Usual Malaysian rice includes pandan leaves. I added bayleaf as pandan leaves is not available.
Adding lemongrass gives a nice aroma to the rice. Many people don't add that. I would recommend to add the lemongrass.
Have a combination of all side dishes with rice together to experience the taste of this rice recipe.
