Instant Pot Buckwheat Vegetable Khichdi (No Onion No Garlic Khichdi)

Buckwheat has lots of fibre content that helps to fight constipation, helps in lowering the bad cholesterol, and a gluten free food. This Khichdi is best for those people during their fasting. Since we are adding green gram with buckwheat it will be really a healthy and filling dish with vegetables that serves you a complete healthy meal in your diet. Cooking time: 15 mins

Serving: 1-2

Ingredients:

Roasted Buckwheat - 1/4 cup (dry roast until it gets heated up)
Roasted Green gram (green moongdal) - 1/4 cup (dry roast the dal until nice aroma comes)
Tomato - 1 (sliced)
Carrot - 1/4 (chopped)
Beans - 5 (chopped)
Peas - 1/4 cup
Turmeric - 1/4 tspn
Cumin seeds - 1 tspn
Oil - 2 tspn
Ghee - 1 tspn
Curry leaves - few
Coriander leaves - a handful
Salt to taste

To Grind:

Ginger - 1 inch
Green chilli - 2

Method:

1. Grab all the ingredients. Soak the buckwheat and Dal together in warm water for 1 hr.

2. Grind the ingredients for it into a coarse mixture.

3. Switch on the IP. Press the saute mode. Add oil, ghee. Add cumin seeds.

4. Add tomato, curry leaves. Saute till it becomes mushy.

5. Add the grinded mixture. Saute for few seconds.

6. Add all the vegetables, salt, turmeric. Saute for 10 seconds.

7. Add the washed dal, buckwheat mixture. Mix well.

8. Add coriander leaves. Add 1 1/4 cup of water, asafoetida. Mix well.


9. Close the lid. Press the manual / Pressure cook mode for 12 mins in High Pressure HP in sealed position. Then do Natural Pressure Release NPR.

10. Open the lid. Mix well.

11. Enjoy the hot and healthy buckwheat vegetable Khichdi with paapad or pickle of your choice.

Notes:

You can even reduce the quantity of moongdal to 2 tbsn instead of equal quantities.
You can add split green moongdal instead of whole ones.
